For me, Summer hasn't truly begun until A: Roland Garros has started and B: I've made this fruit salad.
I Hope you love it as much as I do.
Ingredients:
Spring of Mint - To Taste
Punnet of Strawberries - Hulled and Sliced
Punnet of Raspberries
1 Orange - Peeled and Segmented
Juice of another Orange
A Mango - Peeled and cut into bite sized chunks
Any other fruit you like such as papaya, pomegranate seeds etc...
1tbsp Caster Sugar or to taste, depending on how ripe/sweet the fruit is
Method:
Shred the mint with your hands and place in a large bowl.
Add the other fruit salad ingredients,
Finish off with the sugar; give the whole thing a stir with a large spoon
cover with cling film and pop in the fridge for at least an hour.
