Five ingredients make a light as air coffee dessert by the name of Tiramisu. Beware though: it has to be made the day before you need it but I find that useful. Also it helps the texture of the finished dish if all the ingredients are at room temprature before you begin.
3 egg yolks and 75g caster sugar but keep only one egg white <I freeze the other 2 whites>
Whisk the white until stiff and the yolks and sugar until light pale and the sugar has completely dissolved.
Cold coffee with 100ml of amaretto liqueur; Here I'm soaking fairy and slices of madeira cake. My sister Vanessa, loves using shortbread biscuits; I've been known to use amaretto or savoiardi biscuits even madeleines....
The important thing is that the cake/biscuit you choose are thoroughly soaked.
Add the room temperature mascarpone <500g> with 50ml amaretto to the egg yolks and sugar mix and whisk until combined
Fold in the egg white and layer half of this mix over the coffee soaked cake.
Repeat with another layer of soaked cake and one more layer of cream, cover and refrigerate over night.
Once ready to eat: sift 1 tablespoon cocoa over the dessert.
