It's my other halfs' birthday today and I baked him a cake. His favourite Red Velvet with cream cheese frosting. Now the cake came out of a box, but the frosting was all me:
Cake:
I used Betty Crocker Red Velvet. Just follow the instructions.
Simple.
Forsting
- 600g icing sugar
- 100g unsalted butter
- 25ml milk
- 250g cream cheese at room temperature (Preferably full fat I used Philadelphia)
- Beat the icing sugar, butter and milk together until just combined.
- Add the cream cheese and using and electric whisk, whisk for 5 minutes until smooth and creamy.
- The cake has to be stone cold otherwise the icing will melt. Sandwich the icing between the cakes spreading it evenly on the tops and sides as well.
