Welcome back!
Cinco de Mayo has been and gone, it is a favourite holiday of mine because it generally means I can indulge in Tequila. This year however, I felt like a change and went for the rum route. Coconut Rum to be exact (my love for all things coco is legendary).
Here is the recipe for my Pina Colada:
Ingredients:
1 part coconut rum
1 part coconut milk/cream
3 parts pineapple juice
crushed ice
Method:
Put all of the ingredients in a blender and whizz until thick and frothy.
