There's a debate going on in the world about TRUE MEXICAN GUACAMOLE. Tomato or no Tomato?!
Please pay attention. Very serious stuff going on here....
Original recipes contain tomato (mostly); However, I tend to find that it makes the guacamole too liquid-y also I don't like the red interfering with all the other shades of green.
Ingredients:
2 Spring onion, finally chopped
1 Green chillie, finally chopped
Salt
Juice of 1 Lime
2 Ripe avocadoes, finally chopped
Olive oil
small bunch of coriander, chopped
Method:
Put the spring onion, chillie, salt and lime juice in a clean bowl. Cover with cling film and let steep for 10-15 minutes.
Add avocadoes, mash with a fork and taste for seasoning.
Add olive oil and chopped coriander to taste.
Eat with some pita chips
