Yoghurt Drop Scone | Book of Elsa

Yoghurt Drop Scone... The title says it all: a quintessential Sunday family breakfast favourite that are easy to knock-up and utterly delicious. This particular recipe is adapted from the cookbook Mamushka from OIia Hercules a review of which is available here 


Makes 4-6 (Large ones)

160ml natural yoghurt 
1 egg
2 tablespoon icing sugar
90g plain flour
¼ teaspoon bicarbonate of soda
pinch of salt
1 tablespoon of unsalted butter, melted 
cooked streaky bacon to serve

Method:

Beat the egg with salt and icing sugar, then add the flour and yoghurt. Once incorporated add the melted butter and let stand whilst you heat a non-stick pan to medium high. 
Drop a quarter cup (60ml) of batter one at a time into the hot pan and wait. Once air bubbles appear on the surface they are ready to flip should take 2-3 minutes then 1 more minute on the other side. 
Repeat with the remaining batter and serve with the bacon.
