Soup is one dinner that doesn't require much effort but taste like it should. Maybe that's why some people find it easier to buy the ready made kind in tubs from the chilled section of the supermarket. Make it once though and you will understand why even in the middle of the horrible work week I can come home and make this.
Ingredients:
1 tablespoon olive oil
2 onions peeled and roughly chopped (though it could be 1 don't worry about it)
2 potatoes peeled and roughly chopped (if you don't have any in the house just leave it out, honest.)
1 butternut squash peeled and chopped into 3cm cubes but seriously no need for a ruler just go easy
1 chicken stock cube
1 vegetable stock cube. Obviously if vegetarians are eating this just do 2 veg stock cubes.
1 teaspoon sweet smoked paprika
shredded cooked chicken
naan
Method
In a big pan put the oil, onions, potatoes, butternut squash. Turn the heat to medium and season with salt and pepper keep in mind though that the stock later is salty. Once the onions have soften a little add the paprika and stir to coat then cook for a further minute before adding 1.5 litres of cold water and the stock cubes. Let come to a bubble then turn the heat down to low. Cover and leave for 20 minutes or until the vegetables are really soft then blend with a stick blender or whatever you have. Check for seasoning.
Put some cooked chicken at the bottom of each bowl and top with the soup. Eat with naan.
