Here is the recipe for my take on char sui bao including a video of how I make it.

- One cup of milk
- One sachet fast acting yeast
- Three tablespoons sugar
- Two cups of plain flour
- Two tablespoons of vegetable oil
- pinch of salt
- One teaspoon baking powder
Method:
- Heat the milk in a microwave for 20 seconds, then add the yeast and 1 tablespoon of sugar. Set aside.
- Mix the flour, salt, baking powder, vegetable oil and remaining sugar in a large mixing bowl until just combined.
- Add the milky mixture to the flour mixture a third at a time until it comes together and is a little sticky. Be careful, depending on the type of flour/humidity you may not need all the liquid.
- Put the dough into a clean bowl cover with cling film and let it rest for about an hour or until the dough has doubled in size.
- Turn out onto a lightly floured surface, roll the dough into a sausage shape and divide into 5 pieces.
- Each piece can then be rolled out into a disc, making sure the outer edges are thinner than the middle.
- Put your filling onto the disc and close securely. Resting the dough on a small square of baking parchment. Carry on until all the dough is used up.
- Steam the dumplings for 20 minutes on a moderate to high heat, then let them rest for 5 minutes before applying to face...
