Pot Stickers | Book of Elsa

This recipe takes time, effort and dedication: I won't apologise for it! Whenever I make these pots stickers it is because I WANT to spend time in the kitchen losing myself and relaxing; also these make for a fantastic group exercise. 

Ingredients for the dough: 
300g Plain Flour
200ml hot water
pinch of salt

Method for the dough:
I use a stand alone mixer but a bowl and wooden spoon works well too. 
Put the flour and hot water in a mixer fitted with a dough hook, add the salt and knead for 10 minutes until the dough is smooth and bouncy. Cover with cling and rest for 20 minutes. 
If your using a bowl and wooden spoon: bring the flour, salt and hot water together until it almost gathers into a clump then turn out onto a lightly floured surface and knead by hand for 10 minutes. Don't be tempted to add more flour. The dough will come good I promise.

Basically Good BBQ Marinade | Book of Elsa

The mush:
1 Red onion
1White onion
1inch piece of Ginger
4 cloves of garlic (or to taste)
Fish sauce
Olive oil
Rice wine vinegar

Dry Rub:
Jerk Seasoning
Chillie flakes
Ground Cumin
salt and Pepper

Chinese Style Dumplings

Hi Everyone!
Here is the recipe for my take on char sui bao including a video of how I make it.

Ingredients:
  • One cup of milk
  • One sachet fast acting yeast
  • Three tablespoons sugar
  • Two cups of plain flour
  • Two tablespoons of vegetable oil
  • pinch of salt
  • One teaspoon baking powder

Happy New Year!!


Chinese New Year is upon us and the year of the Horse is my birth year sooo to celebrate I am getting Chinese food and having an old style Jet Li marathon starting with Once Upon a Time in China and Martial Arts of Shaolin. Can't Wait!
Also I've found a recipe for my favourite dim sum of all time: Pork and Prawn Dumplings, from the BBC Food website to try later...
Any recommendations??
