Prawn Fritters | Book of Elsa

I feel kind of silly typing this up because it's not really a recipe. No really, it isn't. Most of the ingredients you probably have in your kitchen (bar the prawns) plus the whole process from raw to mouth should take twenty minutes max.
However, these are addictive; If you ever make just one of my recipes: This is THE ONE.
Promise.

  • 2 spring onions
  • 250g raw prawns
  • 50g plain flour
  • splash of shao hsing rice wine (sherry, red wine vinegar also works)
  • vegetable oil (for frying)
  • lemon or lime wedges to serve

Method:

  1. Into a food processor put the garlic and roughly chopped spring onions, blitz.
  2. Add the prawns, flour and splash of shao hsing rice wine, blitz again.
  3. Leave to rest in fridge for 10 minutes before deep fat frying.
